Black Bean Tacos
Servings 8 tacos
Equipment
- 1 Saucepan/medium pot
- 1 Liquid measuring cup (Dry measuring cup can be used if liquid one is unavailable)
- 1 Large spoon
- Measuring spoons (1/2 tsp and 1 tsp)
- 1 Spoon rest
- 1 Can opener
Ingredients
- 2 14.5 oz Black Beans drained and rinsed
- 1 cup Salsa
- 1 1/2 tsp Chili Powder
- 1 tsp Ground Cumin
- 8 Tortillas
- Optional toppings: shredded lettuce; Mexican blend cheese; sour cream; cilantro; lime
Instructions
- In a medium saucepan combine black beans, salsa, chili powder and cumin.
- Simmer mixture for about 5 -10 minutes, stirring occasionally.
- Slightly mash beans if desired.
- To assemble tacos, on each tortilla layer black bean mixture and desired toppings.
- Serve immediately.
