Black Bean Tacos

Equipment

  • 1 Saucepan/medium pot
  • 1 Liquid measuring cup (Dry measuring cup can be used if liquid one is unavailable)
  • 1 Large spoon
  • Measuring spoons (1/2 tsp and 1 tsp)
  • 1 Spoon rest
  • 1 Can opener

Ingredients

  • 2 14.5 oz Black Beans drained and rinsed
  • 1 cup Salsa
  • 1 1/2 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 8 Tortillas
  • Optional toppings: shredded lettuce; Mexican blend cheese; sour cream; cilantro; lime

Instructions

  • In a medium saucepan combine black beans, salsa, chili powder and cumin.
  • Simmer mixture for about 5 -10 minutes, stirring occasionally.
  • Slightly mash beans if desired.
  • To assemble tacos, on each tortilla layer black bean mixture and desired toppings.
  • Serve immediately.
